Short answer
Apple doesn't publish an end date, but recent iPhones have had major iOS updates for about 6 to 8 years after launch, and security fixes for longer. Today's iOS 27 runs on every iPhone from the iPhone 11 and the iPhone SE (2nd generation) onwards, so any model from 2021 or later should have several years left.

Apple jumped from iOS 18 to iOS 26 in 2025, so the version numbers skip; it is still one major update a year.
What happens when updates stop
The phone keeps working. It just stops getting new iOS features, and over time some apps need a newer iOS than it can run. Apple usually keeps sending security fixes to older iOS versions for a while: for the iPhone 15 Pro Max it has stated, in a UK filing, a minimum of 5 years of security updates from when it went on sale. If you want the most years, buy the newest model your budget allows.
Apple Intelligence
Apple Intelligence needs an iPhone 15 Pro or 15 Pro Max, any iPhone 16 (including the 16e) or newer. Older models still get iOS updates, just without those features.
